Nakazen is a small sake brewery in Kiso Fukushima starting its history in 1865.
They make 90kl of sake per year without expanding its scale.
Their sake is purely made of rice from Nagano, and they started to grow brewer's rice in Agematsu town (locates next to Kiso Fukushima) from 2008. They now make sake from their own rice.
Water is another important ingredient. They use subsoil water of Mt. Ontake from the establishment. (hardness: 42ppm, ph7.1, clear and soft in mouth)
Sake made of this water is slow in fermentation, mild and round taste.
It's specialty, Nakanori-san is in the lyric of the local folk song.
